Today is the last day of the SpringintoNOW challenge and I wanted to share with you a few things I ate today for #WIAW!
This morning post workout I made this ‘shamrock’ shake smoothie, and then I got creative with some ginger wasabi cashew butter and had that as part of my dinner!
Shamrock Shake Smoothie
- 1/2 cup unsweetened vanilla almond milk
- 1 banana
- 1/2 small avocado
- 1/2 tablespoon maple syrup
- 1/4 teaspoon mint extract
- 2 scoops NOW collagen
- One tablespoon NOW MTC oil
- Cacao nibs (optional)
Directions:
Blend all the ingredients in a blender except for the cacao nibs.
Pour into a cup and garnish with the nibs if desired
Next, I pulled up a recipe I made a few years ago, swapped a few ingredients and dinner is served!
Ginger Wasabi Cashew Sauce
- 2 TBS now wasabi cashew butter
- 2 Tbsp sesame oil
- 3 Tbsp coconut amino
- 1 Tbsp coconut sugar
- 1 Tbsp peanut butter
Directions:
Mix all the ingredients together in a blender.
Drizzle over chicken, veggies, riced cauliflower, rice noodles, or any combo of our choosing!

That cashew sauce looks good. I like a good nut butter sauce for stir fry veggies
